Caines is a transracial adoptee, born in Jamaica and raised in Exeter. He was trained as a chef by Raymond Blanc. In 1994 he lost his right arm in a car accident, but with hard work, dedication and a bionic arm, he returned to work as head chef at the Gidleigh Park Hotel, Devon. He is now (2002) chef at the Royal Clarence Hotel, Exeter. His story was told in a QED documentary on BBC1, 18 April 1995.
